Description

Crispy, cheesy, and loaded with flavor — these Loaded Baked Potato Skins are a game night essential. Topped with melted cheddar, crispy bacon, and cool sour cream, they’re the kind of finger food everyone reaches for first.

Ingredients

  • 4 large russet potatoes

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 cup shredded cheddar cheese

  • 4 slices cooked bacon, crumbled

  • ¼ cup sour cream

  • 2 green onions, chopped

Instructions

  1. Bake potatoes at 400°F for 1 hour. Let cool slightly.

  2. Cut in half, scoop out most of the center, leaving about ¼-inch of potato.

  3. Brush skins with olive oil, season with salt and pepper, and bake 10 more minutes.

  4. Fill with cheese and bacon. Bake until melted.

  5. Top with sour cream and green onions before serving.

 Tips for Perfect Potato Skins

  • Use russet potatoes — they bake up fluffy inside and crisp outside.

  • Don’t over-scoop! Leave about ¼ inch of potato in each skin so they hold together.
