Ingredients
4 large russet potatoes
1 tbsp olive oil
Salt & pepper to taste
1 cup shredded cheddar cheese
4 slices cooked bacon, crumbled
¼ cup sour cream
2 green onions, chopped
Instructions
Bake potatoes at 400°F for 1 hour. Let cool slightly.
Cut in half, scoop out most of the center, leaving about ¼-inch of potato.
Brush skins with olive oil, season with salt and pepper, and bake 10 more minutes.
Fill with cheese and bacon. Bake until melted.
Tips for Perfect Potato Skins
Use russet potatoes — they bake up fluffy inside and crisp outside.
Don’t over-scoop! Leave about ¼ inch of potato in each skin so they hold together.
