Ingredients
6 cups mixed greens (spring mix or spinach)
2 apples, thinly sliced (Honeycrisp or Gala)
½ cup candied or toasted pecans
¼ cup crumbled feta or goat cheese
¼ cup dried cranberries (optional)
2 tbsp red onion, thinly sliced
Maple Dressing:
¼ cup olive oil
2 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp Dijon mustard
Salt & pepper to taste
Instructions
In a small bowl, whisk together all dressing ingredients.
In a large bowl, combine greens, apples, pecans, cheese, and red onion.
