Ingredients

4 large green bell peppers

1 pound ground beef

1 teaspoon salt1/2 teaspoon black pepper

1 teaspoon garlic powder

1 small onion, diced

2 cloves garlic, minced

1 cup cooked white rice

1 can (14.5 oz) diced tomatoes

1 tablespoon tomato paste

1 teaspoon Italian seasoning

1 teaspoon Worcestershire sauce

1 cup shredded cheddar or mozzarella cheese

Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F.

  2. Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.

  3. In a large skillet over medium heat, cook the ground beef, salt, pepper, and garlic powder until browned.

  4. Add the onion and garlic. Cook 2–3 minutes until softened.

  5. Stir in the cooked rice, diced tomatoes, tomato paste, Italian seasoning, and Worcestershire sauce. Mix well and simmer 3 minutes.

  6. Place the peppers upright in a baking dish. Spoon the beef mixture evenly into each pepper.

  7. Cover the dish with foil and bake for 30 minutes.

  8. Remove foil, top each pepper with cheese, and bake an additional 10–15 minutes until the cheese is melted and peppers are tender.

  9. Garnish with parsley if desired.

How to Serve

Serve warm with mashed potatoes, a simple side salad, or garlic bread. These also reheat well for next-day lunches.
