Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 4
Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 pound boneless skinless chicken breast, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
4 cloves garlic, minced
3 cups chicken broth
2 cups heavy cream
12 ounces fettuccine pasta (or any long pasta)
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning Fresh parsley, chopped (optional)
Instructions
Heat the butter and olive oil in a large pot or deep skillet over medium heat.
Add the chicken, salt, pepper, and garlic powder. Cook until the chicken is lightly browned on all sides.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Pour in the chicken broth and heavy cream. Stir to combine.
Add the pasta directly into the pot, making sure it is mostly submerged.
Bring to a simmer, then reduce the heat to medium-low. Cook for 12–15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
Stir in the parmesan cheese and Italian seasoning until the sauce becomes creamy and smooth.
Adjust thickness with extra cream or broth if needed.
Serve warm, sprinkled with fresh parsley if desired.
How to Serve
Serve straight from the pot with a side of garlic bread or a simple green salad. This dish also pairs well with steamed broccoli for extra freshness.
Tips
If the sauce thickens too much, add a splash of broth or cream to thin it out. For extra flavor, add mushrooms or spinach during the last 5 minutes of cooking. Use freshly grated Parmesan for the creamiest sauce; pre-shredded cheese won’t melt as smoothly. You can substitute half-and-half for heavy cream, but the sauce will be slightly thinner.
One-Pot Chicken Alfredo — FAQ
Q: Can I use rotisserie chicken? Yes—add shredded rotisserie chicken at the end to save time.
Q: Can I use a different pasta shape? Any short pasta works well, like penne, rotini, or farfalle.
Q: How do I keep the sauce from clumping? Make sure to stir in the Parmesan slowly and keep the heat low.
Q: Can I store leftovers? Store 2–3 days in the fridge. Add a splash of milk or cream when reheating to loosen the sauce.
